Vegetable Soup with Dumplings

A soup is good in any situation: if you have a cold, if it’s too hot outside, if you need to loose weight or you just want to pamper your kid. Well, if you have an allergic one -like we do- you can try to variate your soup with this great recipe of Vegetable Soup with Dumplings without eggs. They have a great texture and taste!

Ingredients:

  • Soup:
  • 1 onion chopped
  • 3 carrots grated
  • 1 red pepper diced
  • 1/2 celeriac (or 3 ribs of celery) peeled and grated (or sliced)
  • 1 parsnip peeled
  • 2.5 l of water
  • 3 tbl spoons of oil
  • 1 teaspoon of sweet paprika
  • Dumplings:
  • 1 grated onion
  • 1 tbl spoon of starch (we’ve used from potato)
  • 8 tbl spoons of flour
  • ½ glass of water
  • Preparation:
  • fresh parsley
  • thyme (optional)
  • coarse salt
  • pepper

Method:

  1. In a big pot cook the chopped onion in oil together with the sweet paprika (and thyme) for 2 min.
  2. Pour the water on top and put the lid on. When the water boils, put the carrots, pepper, celeriac and the entire parsnip and stir. Reduce the heat and simmer for about 20 min.
  3. Meanwhile prepare the dumplings:
    1. Put a smaller pot with water to boil. Mix the starch, flour and onion with half glass of water until obtaining a pasty consistency. This is very important because you need your dumplings to keep in place once you put them into the boiling water. In order to obtain the optimum consistency for your dumplings you need to take care at two important steps:
      • Once you have prepared the mix for dumplings put it immediately into the water. The more the mix stays, the more it hardens;
      • The water needs to be almost boiling when you put the dumplings.
    2. Boil the dumplings in the water for 10 min, then take them out and put them in a strainer to drain a little bit.
  4.  Put the drained dumplings in the soup and season well with salt and pepper. Let it simmer for another 10 min. Turn off the cooker, take out the parsnip and add the fresh chopped parsley and let it rest with the lid on.
